You can stay in the transit area for the amount of time you need fr your next flight. If you want to leave that area you should submit a PCR test or maintain a covid vaccine certificate.

My son who is 14 and daughter who is 15 had one course of covid vacine in the UK end of October, planning to travel to Istanbul on the 19th of Jan 2022 from Stanstead UK, they are not due for second dose of the vacine until end of Jan, will they be classified as fully vacinated? Please advise thank you?

As long as your children will manage to get a Covid vaccine certification, then they won't have any problems entering the country. Just make sure they apply for a HES code before landing all of you.
